PLANNING AND IMPLEMENTATION OF FORUM
Upon receiving the task of creating a forum, members of Group 2 decided to meet and discuss the flow of our forum through Google Meet during our Kok-K meeting. In the meeting, we have each discussed and shared our opinions on the topic of forum. Since Group 2's Weebly Theme is coffee, we thought it would be fun to conduct a forum about Coffee. Upon our agreement on the topic, the members of the group gave out suggestions on who should play the role of panellists and chairperson. The suggestions were then unanimously agreed upon all members. On the very day, the members of Group 2 began to work on our script writing. Due to the excellent team work, the compilation of script was done on time. The cooperation of members enabled our group members to conduct a round of rehearsal to ensure the smooth sailing of the recording process. Regardless of the technical difficulties, all members were so patient and understanding in solving a problem.
Despite only getting to know each other virtually, the members of Group 2 have possessed a great understanding with one another. Although we are all from a different course, the members were all very committed in making the forum a success.
It was a great pleasure to work with all these amazing people as we got to share different opinions and we learnt how to respect each others perspective through this forum. Knowing for a fact that we had a few members who loved coffee and a few that did not like coffee, we got to get to know each other in depth through our discussion session while planning for the forum.
It was by far one of the most pleasant group project we have done as a team since all of us were very comfortable with each other regardless of the topic that we were talking about.
In conclusion, the planning and the implementation of our group forum was indeed a success as all of us are more than happy with the outcome.

I’m Shuvalakshimey and I’ll be your chairperson for today’s forum, titled Coffee. We have amazing panels with us from EXPRESSO Company this morning to share some insights and answer some controversial questions regarding coffee. Without further ado, let me introduce to you our first panel speaker Miss Athirah followed by Mr CK, Miss Michelle, Miss Natasha and Miss Fiqa. In today’s world, humans are being divided into various categories for no reason and one of it has got to be the division between a non-coffee drinker and coffee drinkers. Speaking of which, only true coffee drinkers can identify all types of coffee. Miss Athirah, I heard you’re a die-hard fan of coffees. Is it true?

First off all, thank you for having me in your forum today and yes, I am indeed a die-hard fan of coffees.

That’s amazing, Miss Athirah! What is your favourite type of coffee and could you share with us on the various types of coffee beans?
Panellist (Athirah):
I’m sure all coffee lovers have their own unique taste about their favourite coffee. My personal favourite is Affogato Coffee. Now, let me introduce you to the types of coffee beans we have in the world. This could be the first time for some people to hear about it.
The first type of coffee bean is Arabica coffee. Arabica coffee is one of the most popular coffees in the world. Hailing from Brazil and Ethiopia. Moreover, Arabica coffee is the coffee that accounts for over 60% of world coffee production. Arabica coffee beans are the most acidic compared to other types of coffee and it is usually roasted not too dark or too bright the colour of the coffee beans.
The second is Liberika coffee. This coffee comes from Liberia, West Africa. This type of coffee tastes like flowers, fruits and smoked aroma. You know something, adding 10% of Liberian coffee into any coffee blend will cause the taste to be more aromatic and palatable.
Lastly, is Robusta coffee. This coffee is like arabica coffee but the size of the coffee beans is way rounder. It has a higher caffeine content and a less fragrant aroma. It is less acidic and tastes better mixed with sugar and milk. Its higher caffeine content makes Robusta coffee the best choice for a blend of Espresso and coffee O Iced Americano.

That’s an amazing sharing Miss Athirah. I never knew Liberian Coffee Beans could work a magic like that. Well, it’s a no secret that coffee beverages are produced through the extraction from coffee powder, but I’ve always wondered how coffee beans we’re made. I believe Mr Ck is an expert in this. Mr CK could you enlighten us on how coffee beans are made?

Well of course Miss Shuva. Coffee beans are actually seeding of coffee berries. People plant coffee berries in a large scale and when the berries are ripened, it turns into a bright, deep red colour and it is ready to be harvested. In places like Columbia and Ethiopia they normally use the hand pick method to harvest them while in developed countries, namely Brazil, uses machines for this process. The harvesting methods used are the strip picks and selection pick. Once the berries are harvested, they will be sent to the factories for processing. They are processed in 2 ways.

Interesting, what are the 2 ways of processing them?
Panellist (CK):
First is a dry process that is done under the sun and racking them frequently to avoid spoilage of the flesh. When the moisture is reduced to an extent, they would rip off the pulps and then here comes the beans. Another cleaner way is to remove the skin and flesh first and dry it under the sun with the presence of the pectin layer. It reserves the cleanliness of the coffee and gives the texture and sweetness of caramel.
Secondly, the wet method; washing and water-pulping. For the washing method, the beans will be placed in the water tank together with layers of pectin (a gel layer) on it for fermentation. After it’s done, the beans will be rinsed in water to remove the excessive substance. It is a cleaner and faster way, and most commercial coffee brands use this method. Next water-pulping. It is a unique way for Indonesian farmers to process their coffee beans. The beans are first dried under the sun to remove 70% of moisture. Then, they will bring them into the water tank, to start the fermentation. It will produce a chocolaty and smoky flavour which gives a richer flavour to the coffee.
After being processed and fermented, the hard shell of the beans will be removed and classified according to their colour and sizes and packed in sacks to be imported for sale. When it arrives at factories, the baristas will grind the beans, and you now have fresh coffee powder. So that is the process of how coffee beans are made and then become powdered.

I could just picture the whole process of making coffee beans with your descriptions. It’s indeed a mind-blowing process. Despite having various types of coffee beans and its interesting process, coffee is mainly regarded to be unhealthy. But our panellist Michelle thinks otherwise, let’s hear from Michelle. Miss Michelle, my question to you is why do you drink coffee?
Panellist (Michelle):
I drink coffee because it has a lot of benefits. As we know, coffee contains caffeine and it helps us to stay awake. When you drink coffee, the caffeine will be absorbed into your bloodstream. From there, it will transfer to your brain. Research shows that caffeine can improve our brain function which includes increase in memory, mood, energy levels, and general mental function. Which leads to another benefit that is the decrease the risk of Alzheimer and Dementia. Drinking coffee can also help with digestion. Take me for example, I have problems with my digestive system, and it makes it hard for me to go to the toilet. But one day I figured out that I can easily pass motion after having a cup of coffee. I did my research, and I found out that caffeine can help you to burn fat! Moreover, coffee can fight depression, as a human being especially student or worker, we get stressed and depressed with our work and life, especially when everything is online due to the pandemic. One has to deal with family and also studies. We may have works and assignment to do but your family seems to not understand. In this case, I always drink coffee 2 to 3 times a day to let me stay energized and feel better, as a matter of fact about 208,424 individuals says that those who drank 4 or more cups of coffee per day were 53% less likely to die due to suicide. Lastly, coffee can make you live longer by lowering the risk of certain disease like heart disease, lower the stroke risk, diabetes, liver and colorectal cancer. That is why I love coffee, the bitter the better.

Indeed, Miss Shuva. In our body there is a substance called adenosine that will encourage and give us a feeling of drowsiness. Caffeine acts to avoid drowsiness by blocking adenosine receptors. When adenosine is constantly blocked from doing its job, the body will produce more adenosine receptors. If this happens, the body will need more caffeine to prevent it. This will encourage your body to take more caffeine to stay awake until it becomes an addiction. When a person attempts to quit drinking coffee or skips coffee from his regular menu, he can experience side effects such as feeling more exhausted. In moderate doses, caffeine can increase the power of focus, but at the same time, especially if it is taken too often in excessive quantities, it can lead to headaches, dizziness, anxiety, fast heartbeat and sleeping disorders such as insomnia.

As we know, caffeine content improves focus, increases metabolism. Luckily, for those who can’t drink coffee, either out of dislike for the taste or how it digests, there is another alternative to still reap the benefits of caffeine. Firstly, they can drink black tea. Black tea is also the holder of numerous health benefits. Researchers boast of its antioxidant properties and its ability to improve cholesterol, blood pressure and even gut health. Like me, who is plagued with stomach upset upon drinking coffee, is a huge proponent of tea. For me black tea gives a rise in energy, it doesn’t make me feel nervous, it’s a pleasant and acts as energy booster. For those who are similarly caffeine-sensitive, black teas are a cheap and a gentle option for a morning drink alternative. Next, Good Day Chocolate Milk is a candy brand that produces chocolate-flavoured supplements, with their line of Energy Chocolates being one of its most popular varieties. As its name denotes, it consists of caffeinated chocolate candies, intended to provide a sweet energy boost. Lastly, chocolate is one of the most effective delivery systems for caffeine, it provides a kick equivalent to that of a cup of coffee.

Those suggestions are indeed intriguing Miss Natasha. I’ll be sure to give those suggestions a try. However, Miss Michelle has told us that drinking coffee helps her with various problems such as easing the process of going to the toilet, but Miss Natasha seems to get terrible stomach upset. Referring back to Mr CK, is it possible that instant coffees lead to such symptoms?

Instant coffee contains substances that might horrify you. For example, trans fat, is a type of oily substances that appear in artificial food, blocks the absorption of healthy fat into our body. Instant coffee is high in sugar, to improve the taste and flavour of the coffee, so you do not feel the unpleasant taste and bitterness of it. Most of the instant coffee is made up of Robusta coffee beans. And most of them are over-roasted. Food flavourings will be added to cover the unpleasant charred flavour easily. Ever heard about acrylamide? It is a highly cancerous substance. Compared with freshly roasted coffee beans, the acrylamide in over-roasted beans, in instant coffee is at least 3 times more. Lastly, caffeine. Most instant coffees use Robusta coffee beans with 3 times more caffeine than the arabica coffee beans, which taste better. More caffeine does not mean better because caffeine overdose may cause body dehydration, headache and even death.

So, does that mean instant coffee is bad for health?

No, there are some instant coffees safe for consuming. When choosing coffees in the mart, try not to go for the 3 in 1 coffee. Try black coffee such as Nescafe Gold instead. Go for those that stated “freeze-dried” instant coffee. This is a new technology that preserves the originality of the coffee; hence you will find some better coffee beans in these coffees. If you prefer milk coffee, just buy the milk and add on your own. Stop drinking artificial creamer.
